2 onions, finely chopped
200 g Italian sausage, chopped
6 chicken thigh or breast fillets, chopped
2 tbs tomato paste
1 tspn oregano
½ cup sun dried tomatoes, chopped
¼ cup red wine vinegar
2 cups chicken stock
250 g penne (or similar pasta)
1/3 cup parsley and basil, chopped
Parmesan cheese, grated
Add sausage pieces, then chicken pieces.
Stir well until meat is all sealed.
Stir in tomato paste, oregano, sun dried tomatoes, vinegar, chicken stock and penne. Cook until pasta is al dente. Add parsley and basil.
Spoon mixture into casserole dish.
Sprinkle with breadcrumbs and parmesan.
Bake at 180c for 30 minutes or until golden.
